I made this the other night and it was so delicious and light. I'm kind of obsessed with avocado (it's so good for you!) and I love finding new ways to eat it. I had this over some fresh greens with a handful of pita chips on the side.
Mango, Avocado, Black Bean Salad with Lime Dressing
What you'll need:
1 ripe (but firm) avocado, halved, peeled and cubed
2 Tbsp fresh lime juice, divided
1 ripe (but firm) mango, peeled and cubed
1 fresh jalapeño pepper (a small one), stemmed, seeded and finely chopped
1/2 tsp grated lime zest
2 Tbsp fresh lime juice, divided

2 Tbsp chopped cilantro
pinch of sea salt
pinch of freshly ground black pepper
pinch sugar (Stevia)
1 Tbsp extra-virgin olive oil
1/2 of (15 oz) can no-salt-added black beans, rinsed and drained

What to do:
Gently toss avocado with 1/2 Tbsp of the lime juice in a medium bowl. Add mango and jalapeño and gently toss to combine. Set aside. In a separate medium sized bowl, whisk together remaining lime juice, lime zest, cilantro, sea salt, pepper and sugar. Whisk in oil until thoroughly combined to make a thick dressing. Add avocado mixture and black beans and toss gently. Toss in a little cilantro and serve immediately.
