Really good quesadilla recipe

We love quesadillas because they are so versatile and can easily be made in to a healthy meal. I came across a recipe and tweaked it a little bit to make it vegetarian and it came out AWESOME so I had to share...

Barbecue "Chicken" Quesadilla (for 2)
2 whole wheat, high fiber tortillas (we like the ones by "Flat Out")
1 cup chopped vegetarian chicken strips, warmed up according to package directions (Morningstar makes an awesome one that you can find in the freezer section-of course if you want to use regular chicken, that will work)
1/2 cup BBQ sauce
2 triangles of Laughing Cow Light swiss cheese
1/2 cup canned black beans, rinsed and drained
1/2 cup frozen corn, thawed
1/2 cup part-skim shredded cheese

Using a fork, mix together Laughing Cow cheese and BBQ sauce. Spread this mixture over half of each tortilla. Lay the chopped chicken over the sauce mixture. Top with black beans and corn. Sprinkle with the shredded cheese. Heat a non-stick skillet over medium heat. Place the tortilla, one at a time, in the skillet and when the cheese starts to melt on the one half, fold over the other half, quesadilla style and press down to seal. Carefully flip over to brown the other side. Serve with extra BBQ sauce and salsa. YUM!!
