Something quick and tasty

Considering our schedules and the fact that I am not home till almost 9:00 after class, quick dinners (and by quick, I mean like no cooking involved) are definitely a necessity in our house. I was craving something along the Mexican variety last night when I got home, but of course could not spend too much time trying to make something or I would be eating dinner at 10:00, so I improvised with a can of refried beans. I must say it came out really good, so if you need something super fast that is healthy and filling....just take a whole wheat tortilla and plop a big scoop of refried beans (we use the 365 brand from Whole Foods with the chili and lime seasoning and they are DELICIOUS), microwave this for 25 seconds, spread the warm beans over tortilla, sprinkle with shredded lettuce, half of a tomato (sliced), a few slices of avocado, a sprinkle of shredded soy cheese (or whatever you have) and a few spoonfuls of salsa...roll up and eat. Good stuff I must say.

Laura-I actually thought of you when I made this because I remembered how much you like those bean burritos from Taco Bell!!
