Thought I would share this recipe with y'all. I love soup when the temps start to drop. I especially love soup that cooks all day in the crock pot. We got home from small group Sunday night, warmed up some good bread, and were ready to chow down! I grew up eating this. My grandpa made it for me all the time, and I thought this was pretty close to his recipe. Enjoy!
Split Pea Soup
1 bag dried split peas, rinsed
1 heaping cup baby carrots, chopped
3 stalks celery, with leaves, chopped
1 cup diced onion
3 cloves finely diced garlic
1 bay leaf
2 tsp dried parsley
Salt and pepper to taste
6 cups veggie broth
*See note below about adding ham
Layer the ingredients in a crock pot in the order listed. Do not stir. Pop the lid on. Cook on low 8-10 hours, or on high 4-5 hours. Serve with warm crusty French bread, or crackers. This freezes easily.
* Traditionally you are supposed to put a big ole' ham hock in this while it cooks. Obviously that didn't fly with me. Instead I followed the above method, but then added some chopped cooked ham to Matt's portion. That worked well.
