February 4 - Tell us what you feed your toddlers/preschoolers
Obviously I do not have any toddlers/preschoolers running around, so I am going to have to improvise this topic a little. I have a feeling that there are A LOT of other crazy busy and time crunched wives out there like me, and we could probably all use some ideas for quick meals to fix for our hubbies:)
I get asked all the time how meals go in our house since I am a veggie and Matt isn't as strict. In all honesty though, Matt really doesn't eat a lot of meat either and he seems pretty happy with whatever veggie dish I make. Every now and then he'll request chicken or steak (or hamburger helper, haha), but usually he just eats whatever I make. I like to cook nice meals when I don't have class, but during the week everything has to be quick and easy. We do have some staples that I fix for him pretty regularly.
Enchiladas
I have posted this recipe before so you can just click here and find it. I use Boca crumbles in this and Matt loves them! It's quick and easy and very tasty.
B.E.L.T.
This is another quick and easy meal to throw together. It's basically just a jazzed up B.L.T. Fry an egg in a heated skillet (that has been sprayed with PAM) until yolk is firm. Remove egg, respray skillet if necessary and add a few strips of turkey bacon (the kind that is already fully cooked). Cook bacon a couple minutes on each side, remove to a stack of paper towels and pat lightly. Slice up a nice ripe tomato and grab some whole romaine or Bib lettuce leaves from fridge. Toast 2 slices of whole wheat bread and spread each piece with a little light butter. To assemble sandwich, stack egg, bacon, tomato slices and lettuce on one slice of bread and top with other slice. I usually serve this with some cut up fruit and chips. It works for me too because I just omit the bacon and egg and add avocado slices (an A.L.T.).

Hummus Pita Sandwich
Again, just something that is super quick. I take a whole wheat pita, cut it in half (so you have 2 half moon shapes) and pop each half in the toaster. Spread toasted halves with hummus. Top with sliced cucumber, tomato, romaine or Bib lettuce, sprouts and feta, or pretty much whatever you like. Good stuff, and healthy!
