So on my list of items that I think a woman needs to know how to make properly is a good cobbler. Cobbler is probably my most favorite dessert and I am always trying different versions, but I decided I needed a "signature" cobbler. Come on, who doesn't want to be known for some sort of homemade concoction? When there is a potluck coming up, I want everyone to say, "Oh and I hope Leanne brings her famous cobbler..." Yeah, I want to be that lady. So anyways, after several trials and errors, I think I have come up with a cobbler good enough to be made again, albeit probably not famous. I just bought a bunch of peaches and blackberries from the farmer's market, so I used those as my fruit, but obviously you can use whatever fruit you like.
Peach and Blackberry Cobbler
4 big ripe peaches, peeled, pitted and sliced thick
1 heaping cup of blackberries (you can use frozen too)
1/4 cup maple syrup
1/2 cup sugar, divided (I used Stevia)
1 tsp. cornstarch
Squeeze of fresh lemon juice
1 cup flour (I used whole wheat)
2 tsp. baking powder
1/4 tsp. salt
1-1/4 cup low fat buttermilk
1/4 cup light butter
Preheat oven to 375 degrees
Whisk together the maple syrup, 1/4 cup sugar, cornstarch and lemon juice. Toss in peaches and berries and coat well. In a separate bowl whisk together flour, baking powder, salt, remaining 1/4 cup sugar and buttermilk, just enough till it's blended. Place butter in an 8x8 baking dish and put dish in oven for just a few minutes until butter melts and coats dish. Remove dish and pour buttermilk batter in pan. DO NOT STIR. Spoon fruit mixture evenly over top and scrape out any extra syrup. Bake for about 50 minutes. Serve warm (with ice cream of course).
